Intralytix Awarded Grant For Managing Salmonella in Food

Intralytix, Inc. has been awarded a Phase II grant under a National Institute of Food And Agriculture (NIFA) / United States Department of Agriculture (USDA) Small Business Innovative Research (SBIR) program for the development of a phage preparation for reducing or eliminating Salmonella contamination in foods.  

Intralytix is a world leader in the development of bacteriophage-based products for food safety.  The company already has two FDA/USDA approved phage-based products on the market: ListShield™, effective at substantially reducing or eliminating Listeria monocytogenes in food products, and EcoShield™, effective at substantially reducing or eliminating E. coli O157:H7 in red meat intended for grinding. 

“We are pleased that phage technology is being recognized by this NIFA/USDA follow-on grant,” remarked John Woloszyn, Intralytix’s CEO.  “Phage-based antibacterials are a quickly emerging technology providing a safe, effective and all natural way to protect food from pathogenic bacterial contamination,” he added.  

 “Salmonella continue to produce foodborne illness at an alarming and increasing rate” stated Dr. Alexander Sulakvelidze, Intralytix’s Chief Scientist and Principal Investigator of the SBIR grant.  “In fact, the incidence of Salmonella-elicited disease during 2010 was nearly 3-fold more than the 2010 national health objective target, and current outbreaks of salmonellosis continue to occur on a regular basis. This NIDA/USDA Phase II grant will help us commercialize our phage preparation SalmoFresh™, effective at substantially reducing or eliminating Salmonella in various foods, thus making those foods safer for consumption” Dr. Sulakvelidze added.

Antibiotic-Free Meat is Available

Antibiotic-Free Meat Business is Booming, Thanks to Chipotle

It's no longer just foodies at farm markets or Whole Foods buying antibiotic-free, pasture-raised meats.
Increased demand is coming from lots of big players, including Hyatt Hotels; institutional food providers such as Bon Appetit Management Co., which caters to schools and companies; and the fast-food chain Chipotle Mexican Grill. And it's changing the game.

In fact, this year, Chipotle, which is growing so quickly that it's opening about three new locations each week, will slowly braise and sell about 120 million pounds of naturally raised pork, chicken and beef that meets its antibiotic-free standards.

The company's transition to antibiotic-free meat began more than a decade ago when Chipotle realized its pork wasn't selling very well. And Steve Ells, the founder, wanted to make some changes.

He stumbled upon an article called "The Lost Taste of Pork" in The Art of Eating, a boutiquey, food-lover's journal, which detailed the practices of Paul Willis, a family farmer in Iowa. Willis raises pigs on pasture, the old-fashioned way. At the time, Willis' methods were a radical departure from the large, industrial operations that confine pigs indoors and feed them regular doses of antibiotics.

I have a new favorite blog to share this week. A 9 year old girl in Scotland blogs each school day about her mid-day meal in the school cafeteria. She posts a photo of her plate and a brief review of the meal du jour.

Included in each post are a list of categories she describes, as:

A Cautionary Tale of a Reusable Grocery Bag


Miss Phage loves to be green. She happily carries reusable shopping bags.  She even collects the prettier ones.  But, truth be told, she uses them to tote just about everything except food from the grocery store or farmer's market. For transporting raw and uncooked food, Miss Phage is a little squeamish about re-using these bags.

Miss Phage is sharing this news story with her dear readers who thoughtfully carry their tote bags and adding a note of caution. Regularly clean your bags in the washing machine, or wipe them down, inside and out, with a diluted bleach solution.

Wipe out Listeria from your foods, too



Baltimore, April 27, 2012 – While the following report is not a “scientific study” in the classical sense, it represents the practical effect of using ListShield™, our phage-based food safety cocktail effective in substantially reducing or eliminating Listeria monocytogenes. Recently, one of our early adaptors of ListShield, a smoked salmon processor, reported the following to our scientific staff:

-- In 2009, prior to the adaption of ListShield, the processor engaged in sporadic testing which resulted in 35-40% samples being returned as L.m. positive.
-- In 2010, the processor implemented upgraded sanitation procedures, which included use of ListShield as the final barrier.
-- The processor reports that regular weekly analysis of random samples of all lots of vacuum-packed, cold-smoked salmon products resulted in a positive rate of less than 1% in 2011.
-- The processor also reports that random sampling of products in the current year, to date, has resulted in zero positives for L.m.
-- The processor has reported to our scientific staff that: “while the drastic improvement is the result of the overall sanitation program, including antimicrobial controls on the raw materials, the processor feels that ListShield is an integral part of the program and will not operate without it.”

What doesn't have to be labeled, and why?

Since early March, the product notoriously known as "pink slime," Beef Products Inc.'s lean finely textured beef, has come under an unprecedented amount of scrutiny from most everyone who eats. The ensuing debate has prompted many to question why ground beef packages containing the product are not labeled as such, or at the very least, why the ammonium hydroxide gas used to kill bacteria on the beef is not labeled as an additive or ingredient.

Which elements of food production get labeled and which go incognito, and why?

In the case of lean finely textured beef, the answer to that question involves taking a look at the rules surrounding particular substances in food production called "processing aids."

Processing aids are substances used to aid food production, are not found at significant levels in the final product and have no "functional or technical effects" on the food. The wide-reaching category encompasses everything from organic acids in produce washes to dough strengtheners in frozen waffles.

In short, neither the U.S. Department of Agriculture (USDA) or the Food and Drug Administration(FDA) require food makers to list processing aids on labels, and a wide variety of processing aids are allowed in food production as long as each one falls within the guidelines of being "Generally Recognized as Safe," a classification for ingredients often abbreviated as "GRAS."

The FDA keeps lists of GRAS products, whether they are used as additives or processing aids. (Whereas processing aids are not identifiable in foods, additives are ingredients required on the label because they are found in the final product and technically alter it.) These GRAS lists include everything from salt to chlorine gas to ammonium hydroxide, the antimicrobial used to sanitize lean beef trimmings.

To better illustrate the role of processing aids in food production, the USDA cites the example of a compound called sodium silicoaluminate and its role in sausage. The seasonings found in some sausages may include sodium silicoaluminate for its technical use as an anti-caking agent. Look at that sausage as a whole, however, and the presence of sodium silicoaluminate does not significantly change the food's identity as a sausage.

Given the complexity of the modern food system, accounting for every input that goes into the average supermarket product would be a challenging and largely impractical undertaking, said Dr. Richard Raymond, former undersecretary for food safety at USDA.

In theory, substances classified as processing aids should carry no distinguishable traits into the final product, and therefore identifying them all on a label should have little value, Raymond told Food Safety News. But the classification of processing aids is not an exact science, he added, and some processes get excluded from the club.

As an example, Raymond cited the FDA's classification of irradiation as an additive rather than a processing aid despite the technique fitting the criteria of a processing aid. Food irradiation is the process of eliminating microorganisms from food through exposure to ionizing radiation.

In the U.S., meats, spices and some fruits and vegetables can be irradiated to improve safety or shelf life. Because of irradiation's classification as an additive, however, irradiated foods are designated with an international symbol, the Radura, to inform consumers their food was treated with irradiation.

"When consumers see the Radura symbol on meat, they don't want to eat it," Raymond said. "But (for) whole carcass, low-dose irradiation is no different from any other processing aid that's generally recognized as safe."

As it turns out, classifying additives and processing aids as GRAS is not an exact science, either. As the term "Generally Recognized" implies, the FDA looks for a substance to be considered safe according to the consensus of qualified experts, but the agency simply lacks the resources to test all ingredients itself.

Individuals in the food industry often supply scientific data to the FDA for the agency to declare an additive or processing aid as GRAS. Because of the sheer number of substances involved in food production, the FDA relies on industry to vet products and has not conducted a full review of GRAS substances since the 1980s.

As a result, industry perception plays a role in whether a substance gets declared as a processing aid or an additive, and therefore whether or not it ends up on the label. By the nature of the categorizing process, each substance gets classified on an individual basis, as the USDA's federal food labeling guide explains:

"[The Food Safety Inspection Service] does not have a definition for incidental additives or processing aids. However, if a company believes that the use of a substance in the manufacture or formulation of a meat or poultry product is consistent with FDA's labeling definition for an incidental additive processing aid, then data needs to be submitted to FSIS to substantiate conformance with the FDA regulation. FSIS will determine on a case-by-case basis whether a request for the specific use of an ingredient is consistent with FDA's labeling definition of an incidental additive processing aid and thus, exempt from labeling."

As the scrutiny around lean finely textured beef continues, the intricacies of food labeling rules are certain to only make the debate slimier.

Life Sentence for Food Safety Violators in China


Food Safety overhauls and better enforcement are an ongoing topic in the US. In China, food safety issues are taken very seriously with harsh sentences to the violators.

In today's news from AsiaOne in Beijing -
Chinese authorities punished a total of nearly 290 people in more than 5,200 food safety cases in 2011, according to new figures. Sources with the State Council's Food Safety Committee said on Thursday that those who violated food safety laws were handed stiff sentences, including life imprisonment and the death penalty with probation, a special form of punishment in China in which a death sentence can be reduced to life imprisonment if the person commits no new crimes.
Law enforcement authorities closed more than 5,000 enterprises involved in food safety crimes and also gave administrative punishments to government officials for misconduct related to the cases.
Health Minister Chen Zhu admitted on Wednesday that China's food safety standards are in urgent need of improvement following a spate of food safety scandals, reported Xinhua News Agency.

The Forgotten Cure: A New Book on Phages


Scientific American editor, Anna Kuchment, has recently published a comprehensive history of phage therapy. I started reading a few chapters online and am very impressed. This fascinating and well written book will appeal to a wide audience of readers - beyond those interested in science, medicine, food production, food safety, personal health and our other obsessions here.  Above all, it's a good read.

Before moving to Scientific American, Anna Kuchment was a writer and editor at Newsweek International and Newsweek magazine. At Newsweek, she worked out of the Moscow bureau and covered technology, science, and medicine among many other topics. Want Safer Beef for One to Two Cents More?


Dr. James Hammitt, a researcher at Harvard University has said in USA Today that American beef consumers are willing to pay 1 cent to 2 cents a pound to reduce the risk of E. coli O157:H7 illnesses. "Common sense plus our paper and many others suggest consumers will pay more for safer food."

 If we as consumers can buy beef that has been naturally treated to be rid of E. coli 0157:H7, for just an extra penny or two per pound, of course we would. 


Now, food producers need to stop dragging their feet with old processes that alter the taste, appearance and smell of food and still don't effectively wipe out E. coli.

Antibiotic Drug Resistance Regains Attention


Last week US Federal regulators announced that farmers and ranchers must restrict their use of certain critical antibiotics in cattle, pigs, chickens, and turkeys because of the growing threat for people with bacterial infections that are resistant to treatment.

FDA officials have long believed antibiotics given to animals before slaughter are linked to growing antibiotic resistance in humans. But they have previously struggled with the issue because the powerful livestock industry says the drugs are needed to keep animals healthy. Now, consumers are more aware of the issue and are also clamoring for antibiotic-free meat.

The agency's order will limit cephalosporins, which are given to some cattle, swine, chickens and turkeys before slaughter. The drugs are used to treat pneumonia, skin infections and meningitis, among other diseases, in humans.

Cephalosporins, which are injected directly into eggs or animals, are not as widely used as many other antibiotics that are mixed with animal feed in massive quantities. But they are significant because they are used in life-threatening situations for humans - and lives could be lost if resistance is built up over time.

"This is an incredibly critical class of antibiotics for humans," said David Wallinga, a physician at the Institute for Agriculture and Trade Policy in Minnesota and a member of the Keep Antibiotics Working coalition. "In the medical world you'd call it a `big gun' or a `drug of last resort.' It's effective against a pretty broad spectrum of bacteria."   more

Federal drug regulators announced on Wednesday that farmers and ranchers must restrict their use of a critical class of antibiotics in cattle, pigs, chickens and turkeys because such practices may have contributed to the growing threat in people of bacterial infections that are resistant to treatment.


The medicines are known as cephalosporins and include brands like Cefzil and Keflex. They are among the most common antibiotics prescribed to treat pneumonia, strep throat, and skin and urinary tract infections. Surgeons also often use them before surgery, and they are particularly popular among pediatricians.

The drugs’ use in agriculture has, according to many microbiologists, led to the development of bacteria that are resistant to their effects, a development that many doctors say has cost thousands of lives.

Antibiotics were the wonder drugs of the 20th century, and their initial uses in both humans and animals were indiscriminate. Farmers became so enamored of the miraculous effects of penicillin and tetracycline on the robustness of cattle, chickens and pigs that the drugs were added in bulk to feed and water, with no need for prescriptions or any sign of sickness in the animals. more
